This isn't Pulitzer-winning writing; these are spontaneous, often hastily written rambles of what I eat, do and learn in my ongoing effort to feel awesome all the time. This was really really good. The mashed swede recipe is well worth remembering. Fish was simply seasoned with salt and pepper then pan fried. Served sauteed kale and lemon. Super.

This meal was so thoroughly satisfying on many many levels, and surprisingly quick to prepare - less than 30 minutes! 

Here's how it came together:

  • The tofu: I followed the Basic Broiled Tofu recipe from Veganomicon.
  • The mushroom: broiled (i.e. grilled) with the tofu.
  • The swede: I used Mark Bittman's Braised and Glazed Turnips recipe, with an added pinch of fennel and caraway to the braising liquid (I used water). This "braised and glazed" is sort of a revelation - it's the first cooking technique I've found that makes me actually want to eat swede.
  • The sprout tops: when the swede was done, I removed them from the pan and added the sprout tops with a bit of water. This did two things: it steamed the sprout tops, and it allowed me to scrape all the yummy bits off the pan from the glazed swede.
  • The chutney: Aunt Sue's Cranberry Chutney, leftovers from Thanksgiving - gotta love it.

This was "brunch". I spent the morning at the gym then going to the fishmongers and the grocery store, so by the time I got back it was after 11am and way past breakfast. 

I was after something like a Polish-style potato pancake with apple sauce and sour cream, but this didn't quite cut it. And it wasn't the lack of potato: it was the execution...

I used Mark Bittman's recipe for vegetable pancakes but the result was more like a "hash" - the pancakes just didn't stay together. I added more egg and flour and this helped, but when the pancakes were finished, the veg was still a bit firm. I also used spring onions which were too "Asian" - next time yellow onion.

So much for the veg pancakes of my dream. Will try again with the other swede lurking in my fridge.

Mind you, I did finish the plate plus ate two extra pancakes afterwards, so I guess they were good enough!
