Can someone please share a recipe for an ultimate egg salad? Mine was so average. The dude will not abide a sub-average egg salad sandwich!

On the plus side, the raw broccoli and honey mustard was nice - a great combo.

Tofu po-boy attempt #2

Vegan po boy attempt #2

My second attempt at making a tofu po boy after seeing this sandwich on Eating Appalachia. I made a tartar style sauce using Mark Bittman's Veganaisse. That was a mistake - too tangy. I need to go back to first principles and try the poy boy recipe in Veganomicon. I've got the cornmeal crusted tofu down, just need to get the condoments right - and the bread. 

But for now I'm kind of maxed out on po boys and think it will be a while before I try this again. This sandwich made me want to return to my simple wholesome veggie dals and soups and foods that require fewer condoments in general. Sometimes I find condoments end up turning food into one big jumble of flavour, all of which leaves my mouth feeling kind of bleh. 

Day 101

Breakfast

Last day in the Brecon Beacons (read the full blog post about my adventure).

Energy in:

 

  • Breakfast: More porridge with banana, apple, raisins, pecans and milk. So good. 
  • Snack: Half of a sandwich made with mozzarella, black olive tempenade, tomato, cucumber, yellow bell pepper and basil. 
  • Lunch: Post walk - the over half ot the above sandwich, and a pear.
  • Snack: Banana with walnuts and two diet Cokes (had a splitting headache - this cured it)
  • Dinner: Back at home, and open faced omelet with toast and avocado (not pictured.

Energy out: 

  • Waterfall walk in the Brecon Beacons. Simply amazing.

 

Day 100

Second day of camping and hiking in the Brecon Beacons! 

Energy in:

  • Breakfast: Porridge with apple, banana, raisins, milk and pecans
  • Lunch: Sandwich with mozzarella, avocado, grilled onion and pepper and black olive tempenade. Cherry tomatoes on the side.
  • Dinner: Veggie chilli with kidney beans, tomato, pepper, carrot, broccoli, avocado and lime juice. Root beer to drink
  • Snacks: Lots of apples and pears

Energy out: 

  • Wet and windy hike up Fan Frynych (629m)

  • BreakfastSourdough Buckwheat Pancakes with blackberry apple compote, yogurt and walnuts; decaf coffee to drink
  • Lunch: Fried egg sandwich with avocado and tomato on sourdough bread; served with a Greek-style salad with romaine lettuce, tomato, red onion, cucumber, lemon, olive oil and fresh oregano.
  • Snack: Banana cocoa protein smoothie
  • Dinner: Grilled Dab with Ottolenghi's Chargrilled Cauliflower with Tomato, Dill and Capers

 

 

 

Day 94

Tofu Po Boy Attempt

Raw kale salad

Food:

  • Breakfast: Sourdough Buckwheat Pancakes with blackberries, strawberries, strawberry jam, bananas and walnuts (the latter two ingredients added post-photo!)
  • Lunch: Eggs "braised" on top of sauteed potato, onion, tomato, cavalo nero and sumac. Plus some avocado, parsley and coriander. Really yummy
  • Snack: Banana protein smoothie
  • Lunch: Tofu "po boy" sandwich with raw kale salad. The sandwich was made using Veganomicon's cornmeal-crusted tofu, plus avocado, tomato, and sauteed onions and pepper. Needed a "creamier" element, though - like mayo! The kale salad was awesome: just fine diced kale, tomato, grated carrot, lemon juice, olive oil, salt & pepper. 
  • Dessert: Apple & tea
Other stuff:
  • Really long walk in the morning (the "loop of death" I call it). Beautiful autumn morning, not too cold.
Need to cut out dessert from my "habits", even if it is just an apple. Felt full when I went to bed. And feeling full this morning. Blargh. Not the way you want to feel right before a swim.
